Chipped Tofu on Toast

Chipped Tofu on Toast

In saucepan put:

1 lb. extra firm tofu, cut into 1/4 inch pieces
2 c. water
2 T. McKay's chicken seasoning

Bring to a boil and boil gently for 20 minutes, drain.

In blender put:

1/2 c. roasted peanuts or raw cashews (peanuts is cheaper and delicious!)
1 c. water
1/2 t. onion powder
1/2 t. garlic powder
1/2 t. McKay's chicken seasoning
2 t. Aminotone or Braggs or Soy sauce
2-4 T. corn starch (depending on how thick you want this)

Blend well for several minutes or until nuts are well ground. Add 1 c. water to blender.

Pour in saucepan with tofu and bring to a boil, stirring. Serve on toast or Zweibach with peanut butter.
Serves 4

*I modified this recipe because it was too salty for me. So you may want to add more seasonings or Soy sauce to make it saltier.

What is Aminotone or Braggs and can it be bought in a regular food market? If not, where?

It is a healthful substitute for soy sauce. You can get it at any health food store. I like Aminotone because it is more concentrated but Braggs is okay too. Both are just like soy sauce--Aminotone has all the essential amino acids in it.

Mmmmm! Sounds delicious! And I must say that the very best tofu dishes I have ever had were cooked by the Eakins. Her tofu lasagna would be worth travelling for.

Unfortunately I don't have it. :( Paula Eakins cooked it at 3ABN and I ate as much as my stomach could handle and then a little more. She also made a tofu cheesecake that was very good. I love cheesecake and have had some bad experiences with the tofu variety but hers was great.

3ABN used to have free recipe sheets you could get that had lots of Paula's recipes on them. They still might. Just call 800-752-3226 and ask for the call center. I have never tasted anything made by Paula that I didn't just love. :)
